We all have the potato!
If there is a vegetable that is unanimous among the smallest and the largest, it is the beautiful potato!
Steamed, baked or in a skillet, cut in half, in sticks or whole, mashed, coated with dough or mixed with cream, the potato has more than one turn in its bag and knows how to seduce both according
to the taste of each.
The Pays de Sault restaurant has built up a solid reputation on the tables of the region over the past 15 years or so. Picked up on the plateau at the end of summer, she is the queen of the
Espezel fair, which takes place every year in late October. You can also find it at our local producers.

Champagne.
Then, in the privacy of this place you can taste the wines, and on this occasion take some of their generous aromas by buying a few bottles.

The Chefs' Taste Madness – Festival des saveurs Pyrénées Audoises
In Quillan, a small town popular with nature lovers, a gastronomic festival has been held since 2017.
For two days, many gourmets come to meet the best local chefs who have put on their finest aprons for the occasion. The event will allow you to taste their signature dishes through many stands,
workshops and live demonstrations.
Every year, around mid-September, Quillan becomes the time of a weekend, the City of Flavors. Starred chefs and other great chefs come to liven it up, and sublimate the flavors of the Pyrenees
Audoises in a friendly and festive atmosphere!
From success to success, the festival of flavors offers the discovery of local products, meeting with producers. One of the most beautiful regional gastronomic events!
