Grey with red dots, it’s the Fario trout! Queen of the Audois rivers, it is the only trout present in the Pyrenees before the hatcheries that begin around 1930.

From the same family, you can find on the Aude another fish: the Common Shadow. Its little Latin name is Thymallus Thymallus, because cooked, it tastes like thyme!
